One thing you will always find in my vegetable drawer is carrots. They’re inexpensive and so versatile. And they’re one veggie that all my kids will eat. So I like to use them quite a lot in my recipes. So this post is dedicated to 7 kid-friendly and easy baking recipes with carrots that my kids love, and I am sure you and yours will too!

As well as being delicious, carrots are nutritious. Full of fibre and vitamins, carrots pack a nutrient boost. There is that old adage that carrots help you see in the dark, and while that might not be true, vitamin A deficiencies are linked to cataracts and macular degeneration (source: your sight matters). So it is a good reason to get cracking with these easy baking recipes with carrots.

Savoury Easy Baking Recipes with Carrots

Carrot Cheddar and Poppy Seed Crackers

This savoury cracker or biscuit recipe makes a really generous batch. The Carrot Cheddar and Poppy Seed Cracker recipe is nut free and egg free so perfect for school lunches. Kids won’t be able to resist the cheesy flavour and, just quietly they are excellent on a cheese board too with a cool glass of wine.

Carrot and Cheese Muffins

These Carrot and Cheese Muffins make a perfect substitute for a sandwich in the lunchbox. With the emphasis on cheese these are also great in mini size as a small snack too.

Ok so technically not hitting the brief of ‘baking recipes with carrots’ as these are no bake but they sure are easy. And totally kid friendly. These Nut Free Carrot Cake Bliss Balls come together in absolutely no time at all and are freezer friendly too so perfect for making a double batch and freezing for school lunches. I love to make some of them quite small so they fit into the treat-wells in the yumbox lunchboxes.

A little reminder just in case you, like me, have kids who don’t eat all their lunch every day.There are so many reasons why lunch may come home partially eaten or uneaten. But just because lunch has come home does that mean it wasn’t a success? NO WAY!Lunchbox success to me is NOT my kids eating everything laid out before them. Sure it’s great when they do, but if they don’t then it’s not a reflection on me.I define success by what I offer. Success to me is OFFERING my children nutritious delicious food, a mix of food that is loved, liked and that they’re learning and for them to choose to eat or to choose not to eat.If you do have school lunches coming home here’s some tips:1️⃣offer the lunchbox again for afternoon snack2️⃣reuse leftovers in salads or with dinner3️⃣if large amounts are coming home regularly check that the size of the lunchbox is suitable, it could just be a lot of food4️⃣send a mix of food you know your kid eats with a new food, not all new foods at once so you know it’s not the food you’re sending but possibly the environment of school (they don’t have long to eat and it can be pretty overwhelming)5️⃣because play can be prioritised over food send food, that’s easy to eat (ie cut up into smaller portions) and that fills tummies up - think protein, fibre and fatsDo your kids finish their school lunches?Bernadette x

Is your face more often like this 😩when you realise you need to pack school lunches? Or is it like this 🤩?I’m generally 95% 🤩 5%😫 and I have a few tips and tricks to keep energised and excited about packing varied school lunches!Tip 1️⃣ meal plan your school lunches like you would your dinners. If you do not meal plan already, you NEED to. It saves you time and money. I find it easy to plan out my meals and lunchboxes for the week and at the same time I write out my grocery list.Tip 2️⃣ Bake in bulk and stash in the freezer. What I tend to do is bake multiple batches of baking in one day and freeze my goodies in reusable ziplock bags or containers to use throughout the term. SIMPLE and really not much more effort than baking one batch. Frozen baked goods normally last 2-3 months so you can bake and freeze enough to last you the whole term.Tip 3️⃣ if you’re really looking to step up your prep to the next level you can also freeze pre-made sandwiches, bread rolls and croissants and have this ready to pull out as needed. But just a note. Not all fillings freeze equally. Don’t go freezing lettuce you will end up with slimy green gunk. But chicken, ham and cheese tend to freeze well.Tip 4️⃣ prep foods ahead of time to pull out quickly for school lunches. For example carrot and celery sticks, poached or roasted chicken, salads, hard boiled eggs or even double your dinner recipe to send leftovers the next day.Tip 5️⃣ embrace night packing. This works for me as I’m less rushed. And I truly always regret it when I don’t! And if you the room and enough lunchboxes you can even step this up a level by packing for two days of lunches. I find if you’re using food quality lunchboxes they’ll stay fresh.What are your tips for school lunch packing?
